Chef Joshua Skenes believes that everyone should have access to high quality food, prepared and served in a responsible and sustainable way. To this end, Skenes has created CARTE415. Using fresh, organic, locally sourced products, Skenes and his team prepares sandwiches, salads and snacks fresh each morning. The menu changes often, reflecting the season and the best available products.
"I wanted to find a way to allow people to enjoy the food I was accustomed to making without having to consult their budgets. I had to get creative." By eliminating overhead expenses CARTE415 can use the best quality produce for the sandwiches, salads, and snacks Skenes' team creates while keeping the prices incredibly reasonable.
Being green is an important element for Skenes: "It is our responsibility to exercise sustainability anywhere we can. It just so happens that following sustainable principles and growing food as it would be in nature produces far superior flavors." All the packaging CARTE415 uses is 100% recyclable and compostable, made from potato starches and corn plastic. The cart itself consists of reused and recycled materials and requires no electricity, using alternative methods to keep the food hot or cold.
